AUBERGINE STUFFED WITH TOFU, MUSHROOMS AND BORLOTTI BEANS

"Aubergines baked with herby tomatoes, beans and vegetables, topped with tofu to make a satisfying main meal.

SERVES 4
PREP 25 minutes
COOK 55-60 minutes

Ingredients
2 aubergines, halved lengthways (500g)
1 tsp rapeseed oil
1 onion, finely chopped (120g)
320g mushrooms, sliced
2 cloves garlic, crushed
1 x 400g can chopped tomatoes
1 heaped tsp dried oregano
1 400g tin borlotti beans, drained (240g)
1 x 80g bag fresh spinach
360g pack tofu, diced small
half ball reduced-fat Mozzarella (62g), thinly sliced
1 fresh tomato (80g) chopped small
2 spring onions (50g) chopped
8 fresh basil leaves, torn

Method
Preheat the oven to 180°C/ gas mark 4.
Scoop the flesh out of the aubergines, chop, and reserve. Place the aubergine skin-side down onto a baking tray and bake for 15 minutes.
Meanwhile, add oil to a pan, then add the onion and cook for 3-4 minutes. Add the mushrooms and chopped aubergine flesh, then cook for a further 5 minutes.
Add the garlic, canned tomatoes and oregano, mix well, cover and simmer for 5 minutes. Next, add the borlotti beans and spinach and cook for 2 minutes.
Remove the aubergines from the oven and fill with the bean and vegetable mixture, then place in an ovenproof dish.
Scatter with tofu, return to the oven and bake for 20 minutes. Top with the sliced mozzarella and bake for a further 20 minutes.
Remove from the oven and scatter with chopped tomato, spring onion and basil to serve.

Chef's tips
Once the aubergines are stuffed, you can pop them in the fridge, and bake when as needed.Use a non-dairy cheese alternative for a vegan version".

Risotto de Legumes

300 g mistura de cogumelos (Paris, Portobello e Pleurothus)
3 a 4 pétalas de tomate seco em conserva
300 g abóbora limpa
400 g brócolos
3 colheres de sopa de azeite
100 g cebola
1 colher de sobremesa de sal
250 g arroz para risotto
2 dl vinho branco
q.b. água
q.b. pimenta
60 g queijo Parmesão
60 g miolo de pinhão

Limpe os cogumelos com papel de cozinha e corte-os em pedaços. Corte as pétalas de tomate seco em tiras e a abóbora em cubos. Separe os brócolos em ramos, lave-os e coza-os a vapor durante seis minutos.
Deite o azeite num tacho e leve a lume brando com a cebola picada. Quando a cebola começar a alourar, adicione os cogumelos e salteie-os durante um a dois minutos sobre lume médio a forte. Junte a abóbora e cozinhe mais dois a três  minutos. Tempere com o sal, junte o arroz e deixe fritar um pouco, mexendo sempre. Adicione o tomate seco e refresque com o vinho branco. Continue a mexer e, quando o arroz tiver absorvido quase todo o líquido, vá adicionando água a ferver aos poucos, mexendo até o arroz estar cozinhado mas cremoso.
Tempere com pimenta, adicione os brócolos cozidos e o queijo ralado e envolva-os bem no arroz. Polvilhe com os pinhões levemente tostados e sirva imediatamente.

Ingredients
hoisin sauce, to serve
2 cloves of garlic, peeled
1 thumb-sized piece of fresh ginger, peeled
½ bunch of fresh coriander
groundnut oil
450 g mixed mushrooms , such as shitake and chestnut
2 tablespoons rice wine vinegar
2 tablespoons sweet chilli sauce
2 tablespoons low-salt soy sauce
4 spring onions
1 fresh red chilli
1 tablespoon sesame oil
1 x 400 g tin of light coconut milk
500 g self-raising flour , or 2 filled coconut milk tins of flour, plus extra for dusting
sea salt
2 tablespoons sesame seeds

Method
To make the filling, finely slice the garlic and ginger. Pick the coriander leaves and set aside, then finely slice the stalks. Heat a splash of groundnut oil in a large frying pan over a medium-high heat, then add the garlic, ginger and coriander stalks. Fry for around 3 minutes, or until golden. Slice the mushrooms, then add to the pan for around 5 minutes, or until lightly golden brown.
Add the vinegar, chilli sauce and soy, then cook for a further 5 minutes, or until the liquid has boiled and bubbled away and the mushrooms are golden brown and starting to caramelise. Transfer to a bowl.
Trim and finely slice the spring onions, then add the white part to the bowl. Deseed and finely slice the chilli, then add half to the bowl, reserving the rest for later. Stir in the sesame oil, then set aside.
Add the coconut milk, 2 heaped tins’ worth of flour and a good pinch of salt to a food processor. Whiz to a dough, then transfer to a flour-dusted surface and roll into a thick sausage. Cut into 12 equal-sized pieces, roll into balls, then flatten into rounds, roughly ½cm thick.
Equally divide the mushroom mixture between each of the 12 dough circles (you'll need roughly 1 tablespoon of filling per circle), making sure to leave a 2cm gap around the edges. Pull and fold the sides over the filling, pinching the edges together to seal. Place upside-down (so the scruffy edges are underneath) in double-layered, lightly greased muffin cases and divide between two bamboo steamer baskets.


Place a wok over a high heat, then fill with 1 litre of boiling water and pop the steamer baskets on top. Reduce the heat to medium and steam for around 12 minutes, or until piping hot through and puffed up.
Meanwhile, toast the sesame seeds in a small frying pan over a medium heat. Once the buns are ready, sprinkle over the seeds and the reserved spring onions and chilli. Tear the coriander leaves on top, then serve with hoisin sauce for dipping.

300 g spinach leaves, washed and spun dry
2 x 125 g good-quality mozzarella pieces, torn into pieces

Method
First, make your quickest tomato sauce to the pan and stir. Cook for a few minutes, then add the spinach (in batches if you need to) and stir again. Simmer away the liquid until you’re left with a thick, tasty mixture that’s not too moist (otherwise it will burst through the dough when you’re cooking the calzone).
Divide the mushroom and spinach mixture evenly between the four pizza bases and spread it out nicely. Top with pieces of mozzarella and season with salt and pepper. To make your calzone, carefully lift the far edge of the pizza dough and pull it over the top towards you – you basically need to fold it in half (imagine it looking like a big Cornish pasty!). Crimp the edges so none of the filling can spill out. Place the calzone side by side on a floured baking tray (use two if you need to), pizza stone or granite slab.
Cook for 10 to 15 minutes on the bottom of the preheated oven until the dough is puffed up and golden on top and the filling is hot."

THAI NOODLE SOUP


"Serves 4
Ready In: 45 minutes

INGREDIENTS:
1 medium yellow onion, peeled and thinly sliced
1 medium carrot, peeled and julienned
6 ounces shiitake mushrooms, stems removed 
6 cloves garlic, peeled and minced
1 tablespoon minced ginger
2 cups sliced bok choy
4 cups Vegetable Stock or low-sodium vegetable stock
2 tablespoons low-sodium soy sauce
Zest and juice of 1 lime 1 serrano chile, stemmed and sliced into thin rounds (for less heat, remove the seeds)
6 ounces brown rice noodles, cooked according to package directions, drained, and kept warm 
1 cup mung bean sprouts
½ cup chopped cilantro

Once the ingredients are prepped for this soup, the dish comes together quickly.
Sautéing the vegetables first shortens the stewing time, so there’s no need to spend long hours over a soup pot. This is a great onepot meal that makes serving dinner a snap.

 Instructions:
1. Place the onion, carrot, and mushrooms in a medium pot and sauté for 7 to 8 minutes. Add water 1 to 2 tablespoons at a time to keep the vegetables from sticking to the pan.
2. Add the garlic, ginger, bok choy, vegetable stock, soy sauce, lime zest and juice, and serrano chile. Bring to a boil over high heat.
3. Reduce the heat to medium, and simmer for 10 minutes.
4. To serve, divide the noodles between four individual bowls. Pour the broth over the ingredients and garnish with the mung bean sprouts and cilantro."

Carbonara Vegetariana

Ingredientes:
  • 200 g de cogumelos frescos ou uma lata de cogumelos (150 g),
  • uma cebola grande,
  • azeite,
  • uma folha de louro,
  • 200 g de espinafres frescos ou 400 g de espinafres congelados,
  • pimenta preta moída,
  • uma malagueta pequena,
  • 400 g de massa (espirais ou macarronete cortado),
  • 1 embalagem, 200 ml, de natas para cozinhar (18% gordura) ou natas ácidas (à venda no Supermercado Aldi e em lojas de produtos de países de Leste).

Modo de preparação:
Aquece-se uma wok (frigideira chinesa), adicionam-se os cogumelo. Quando a água evaporar, adiciona-se azeite e a folha de louro. Quando os cogumelos começam alourar adiciona-se a cebola cortada em gomos grosseiros, uma pitada de sal, uma malagueta e um pouco de pimenta preta moída.
Quando a cebola estiver loura desliga-se o lume, adicionam-se os espinafres frescos, coloca-se uma tampa e deixam-se cozer no calor acumulado.
Coze-se a massa em água a ferver, até ficar al dente (cozida mas ainda dura).
Deita-se a massa sobre os vegetais, adicionam-se as natas, mistura-se e serve-se.

A carbonara pode ser congelada, caso todos os ingredientes nunca tenham sido previamente congelados.
Os espinafres frescos podem ser substituídos por a versão congelada, neste caso devem ser adicionados à mistura de vegetais e cozinhados durante mais tempo.

Variantes: em vez de espinafres adicionar cenoura ralada, pimento vermelho e uma lata de atum em água; trocar os espinafres por bróculos cozidos ao vapor; acrescentar courgete, etc.

Easy Steamed Fish Packets

Ingredients

    2 leeks, thinly sliced
    2 red or yellow bell peppers, cored,
    seeded, and thinly sliced
    1 cup thinly sliced button mushrooms
    1 tbsp chopped fresh parsley, or 1 tsp
    dried
    1 tsp chopped fresh thyme
    1 pound sole fillets (or another whitefleshed
    fish), cut into 4-ounce
    portions
    2 lemons, zested and cut in half

Directions

The protein stays moist without any added fat, and the herbs and fish lend flavor to the vegetables. Be sure to slice your vegetables thinly to ensure even cooking. We used peppers, mushrooms, and leeks here; but you can choose your favorite vegetables. Thinly sliced peppers, asparagus, carrots, celery, onions, zucchini, and green beans are all good choices. Switch up the herbs and spices, too: garlic, basil, or oregano will all work well.
The best thing about this recipe: because everything is cooked in the parchment, cleanup is a breeze!

1. Preheat the oven to 450° F. In a small bowl, mix together the leeks, bell pepper, and mushrooms. In another small bowl, mix together the parsley and thyme.
2. Fold four sheets of 15" x 15" parchment paper in half. Coat one half with nonstick cooking spray and place on a baking sheet, uncoated side down (if you have a griddle that fits across two burners, you can use that in place of the baking sheet). In the center of the sprayed side of each piece of parchment, place 1 fish fillet, one-quarter of the vegetables, lemon zest, and herbs. Juice 1 lemon half over each mixture. Fold over the left side of the parchment. Crimp the edges to form a packet.
3. Place the baking sheet across two burners on the stovetop and set to moderate heat. Once the liquid inside each packet starts to bubble, transfer the pan to the oven. Bake for 8 to 10 minutes, depending on the thickness of the fish. A general rule of thumb is 10 minutes per inch of thickness".

Lavar e descascar todos os legumes;
Ralar cenoura, picar cebola e alho francês, cortar tiras finas de lombardo, cubinhos de courgete;
Refogar em azeite os legumes, acrescentar cogumelos e milho;
Juntar tomate e oregãos;
Temperar com sal;
Adicionar a farinha e o creme vegetal;
Juntar o leite e mexer bem para envolver tudo;
Temperar com noz moscada;
Deixar cozer;
Ferver a água e cozer a massa lasanha;
Depois de cozida arrefecer em água fria;
Colocar a massa num tabuleiro e depois o preparado dos legumes;
Depois massa e assim por camadas até encher o tabuleiro;
Colocar queijo ralado no final;
Levar a forno médio para gratinar e acabar de confeccionar.

The Big Mushroom Salad

"Ingredients (Serves 4)
• 1kg mixed mushrooms (Judas' ear, puffball, honey fungus, agarics, oysters, horn of plenty, etc), cleaned weight
• 1.5l water
• 55g salt
• 500ml white wine vinegar
• 8tbsp olive oil
• 2 garlic cloves, sliced
• 2 slices fresh red chilli
• 1tbsp each finely chopped parsley and coriander
• 1 lemon • salt and pepper to taste

Directions
1) Any kind of mushrooms can go into this salad so be inventive.
2) Clean them as appropriate, and cut to roughly the same size.
3) Bring the water to the boil and add the salt and the vinegar.
4) Add the mushrooms and cook for 10 minutes. Drain well and cool.
5) In a pan, heat the oil, and fry the garlic and chilli to soften.
6) Add the mushrooms, heat through, and taste for seasonings.
7) Stir in the herbs and serve immediately, sprinkled with lemon juice.

Bean & 'Bello Burger

"Serves 4

Ingredients

  • 4 tablespoons canola oil
  • 2 medium portobellos, diced
  • 1/2 red onion, diced
  • 1/2 green bell pepper, cored, seeded and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon freshly ground black pepper
  • 2 egg whites
  • 1 tablespoon honey mustard
  • 1 tablespoon Worcestershire sauce
  • 6 tablespoons dried breadcrumbs
  • 4 whole-wheat buns
  • 1/2 cup barbecue sauce
  • 4 lettuce leaves
  • 4 tomato slices

Preparation

  1. Heat 2 tablespoons oil in a large skillet over medium heat. Cook mushrooms, onion and bell pepper, stirring occasionally, until pepper begins to soften, 4 to 5 minutes. Add beans, paprika, garlic powder and black pepper. Cook, smashing beans with the back of a spoon, 1 to 2 minutes more. Transfer mixture to a bowl and mix in eggs, mustard, Worcestershire sauce and breadcrumbs. Form into 4 patties. Wipe out skillet; heat remaining 2 tablespoons oil over medium heat and cook burgers until brown and firm, 6 to 7 minutes per side. Place on buns; top each with 2 tablespoons barbecue sauce, a lettuce leaf and a tomato slice."

Pizza Rápida

Peneirar duas chávenas de farinha (metade farinha integral, um quarto de farinha de centeio e um quarto farinha branca com fermento) e uma pitada de sal.  Adicionam-se duas colheres (sopa) de azeite. Mistura-se bem, até se obter um areão. Nessa altura junta-se um copo mal cheio de água. Obtém-se uma massa elástica e pronta a usar.
Após a massa ser tendida fina e colocada no tabuleiro, deverá ser untada com molho de tomate de modo a não secar.

A cobertura poderá ser feita com tomate e cebola cortados em rodelas finas, azeitonas, beringelas grelhadas, cogumelos salteados com alho, pimento, ananás, etc. Qualquer folheto promocional de pizzas é bom para tirar algumas ideias de novas coberturas.
Antes de ir ao forno a pizza deverá ser coberta com queijo ralado, de preferência mozarela, oregãos e um fio de azeite.
Assa-se a massa no forno quente, cerca de 200ºC, até a massa ficar loura e bem cozida.
