Risotto de Legumes

300 g mistura de cogumelos (Paris, Portobello e Pleurothus)
3 a 4 pétalas de tomate seco em conserva
300 g abóbora limpa
400 g brócolos
3 colheres de sopa de azeite
100 g cebola
1 colher de sobremesa de sal
250 g arroz para risotto
2 dl vinho branco
q.b. água
q.b. pimenta
60 g queijo Parmesão
60 g miolo de pinhão

Limpe os cogumelos com papel de cozinha e corte-os em pedaços. Corte as pétalas de tomate seco em tiras e a abóbora em cubos. Separe os brócolos em ramos, lave-os e coza-os a vapor durante seis minutos.
Deite o azeite num tacho e leve a lume brando com a cebola picada. Quando a cebola começar a alourar, adicione os cogumelos e salteie-os durante um a dois minutos sobre lume médio a forte. Junte a abóbora e cozinhe mais dois a três  minutos. Tempere com o sal, junte o arroz e deixe fritar um pouco, mexendo sempre. Adicione o tomate seco e refresque com o vinho branco. Continue a mexer e, quando o arroz tiver absorvido quase todo o líquido, vá adicionando água a ferver aos poucos, mexendo até o arroz estar cozinhado mas cremoso.
Tempere com pimenta, adicione os brócolos cozidos e o queijo ralado e envolva-os bem no arroz. Polvilhe com os pinhões levemente tostados e sirva imediatamente.

Ingredients
1 pumpkin, about 1kg
2 cloves garlic, peeled
olive oil
1 red onion , peeled and finely chopped
1 small handful black olives, stoned and chopped
2 sprigs of fresh rosemary, leaves finely chopped
1 dried chilli
sea salt
freshly ground black pepper
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon
50 g basmati rice , washed and drained
75 g dried cranberries
50 g shelled pistachio nuts
1 tangerine , zest of
200 ml organic vegetable stock


Method
Pumpkins are so versatile, the things you can do with them are endless! Their flavour goes well with chilli, nutmeg and sage. If you’ve never cooked one before, you’re in for a real treat.
Preheat the oven to 230ºC/450ºF/gas 8. Cut the lid off the pumpkin and reserve it. Scoop out the seeds with a spoon and keep them to one side. Make the hollow where the seeds were a little bigger by scooping out some more pumpkin flesh. Finely chop this pumpkin flesh and one of the garlic cloves. Heat a frying pan over a medium heat. Pour in a splash of olive oil, then add the chopped pumpkin, chopped garlic, onion, olives, and half the rosemary. Cook gently for 10 minutes or so until the pumpkin has softened.
Meanwhile, place the whole garlic clove and the remaining rosemary in a pestle and mortar. Crumble in the dried chilli, add a good pinch of salt, pepper, nutmeg and cinnamon and bash until you have a paste. Add a little olive oil to loosen up the mixture and then rub the inside of the pumpkin with it.
Season the cooked pumpkin mixture and stir in the rice, cranberries, pistachios and tangerine zest with a pinch each of nutmeg and cinnamon. Mix thoroughly then add the vegetable stock, bring to the boil and simmer for 3 minutes (no longer or the rice will end up overcooked later).
Tear off a sheet of tin foil that’s large enough to wrap the pumpkin in a double layer and lay on top of a baking tray. Place the pumpkin on top and spoon the rice mixture into it, then place its lid back on. Rub the skin with a little olive oil, wrap it up in the foil and bake in the oven for about an hour. The pumpkin is ready when you can easily push a knife into it. Bring it to the table and open it up in front of everyone. Cut it into thick wedges and tuck in, leaving the skin. Serve with seasonal greens.

'Full of veg' tomato sauce

"This is a great sauce to have up your sleeve. When it's made properly it will have a lovely, sweet flavour just like tomatoes. After your children get used to eating it, you can whiz the vegetables up a bit less each time until, eventually, you won't have to whiz it at all. This recipe makes quite a big batch. I tend to make loads at one time, let it cool completely, then bag it up and freeze it.

Ingredients

  • olive oil
  • 2 small onions, peeled and chopped
  • 1 small leek, chopped and washed
  • 2 sticks celery, trimmed and chopped
  • 2 red peppers, chopped
  • 2 courgettes, grated
  • 2 carrots, grated
  • 1 large pinch dried oregano
  • 2 bay leaves
  • 4 x 400 g tinned plum tomatoes
  • 1 small butternut squash, peeled and seeds removed, grated
  • sea salt
  • freshly ground black pepper

Method

Heat a large saucepan (big enough to hold all the ingredients) over a medium heat. Pour in a good lug of oil then add the onions, leek, celery, peppers, courgettes, carrots and herbs. Cook the whole lot slowly for about 20 minutes with the lid on, until all the vegetables are nice and soft but without any colour at all.

Add the tomatoes, squash, 500ml (17½fl oz) of water and a pinch of salt and pepper to the vegetables. Bring to the boil and simmer gently for about 30 minutes until the squash is soft.

Fish out the bay leaves and allow the sauce to cool slightly before blitzing with a hand-held blender until nice and smooth. Have a taste and season with a little more salt and pepper if needed".

Bolo de Cenoura e Abóbora

Ingredientes


    Bolo:
    2 chávenas de farinha
    1 1/4 colheres de chá de especiarias para tarte de abóbora
    2 colheres de chá de fermento em pó
    1 colher de chá de bicarbonato de sódio
    1 chávena de açúcar
    1/3 chávenas de margarina à temperatura ambiente
    1/2 chávenas de açúcar mascavado
    2 ovos
    3 claras
    300 de abóbora cozinha, triturada e escoada
    1 cenoura finamente ralada

    Cobertura:
    100g de queijo creme (tipo Philadelphia)
    1/4 chávenas de açúcar
    1 colher de sopa de leite

Instruções

Unte uma forma de 25x30cm.

Bolo:
Numa tigela pequena misture a farinha,as especiarias para tarte de abóbora, o fermento em pó e o bicarboato de sódio.
Numa tigela grande bata os açúcares com a manteiga, até formar um areão. Adicione os ovos, as claras, a abóbora e a cenoura. Bata bem até misturar tudo. Adicione a mistura da farinha até obter uma massa homogénea. Espalhe a mistura sobre a forma untada e asse em forno a 180.º C. Asse 25 a 30 minutos, até um palito, após ter sido introduzido na massa, saia limpo.

Cobertura:
Misture os ingredientes até obter uma cobertura homogénea.

Arrefeça completamente o bolo antes de espalhar a cobertura.

Sopa Juliana | Carapau grelhado com batata cozida | Laranja

Sopa Juliana

 100g de batata
 100g de couve portuguesa
 100g de cebola
 120g de abóbora
 120g de alho francês
 20ml de azeite

4 pessoas
Descasque, lave e corte em pedaços a batata, a cenoura, a cebola e a abóbora. Lave e corte em pedaços a couve portuguesa e o alho francês. Coloque todos estes ingredientes numa panela com água previamente aquecida e temperada com pouco sal e deixe cozer em lume brando. Passe a sopa com a varinha mágica. Depois de pronta, coloque o azeite e misture muito bem.

Carapau* grelhado com batata cozida

 480g de carapau
 720g de batata
 100g de grelos
 40g de alho
 40ml de azeite

4 pessoas
Descasque, lave e corte a batata em rodelas. Lave e corte os grelos. Numa panela coza a batata e os grelos em água. Quando estiverem cozidos, coe e está pronto a servir. Grelhe o carapau temperado com pouco sal e alho. Sirva num prato as batatas, os grelos e o carapau grelhado e tempere com um fio de azeite.
Para sobremesa descasque a laranja e parta-a em gomos (cerca de 170g de laranja por pessoa).
