'Full of veg' tomato sauce

"This is a great sauce to have up your sleeve. When it's made properly it will have a lovely, sweet flavour just like tomatoes. After your children get used to eating it, you can whiz the vegetables up a bit less each time until, eventually, you won't have to whiz it at all. This recipe makes quite a big batch. I tend to make loads at one time, let it cool completely, then bag it up and freeze it.

Ingredients

  • olive oil
  • 2 small onions, peeled and chopped
  • 1 small leek, chopped and washed
  • 2 sticks celery, trimmed and chopped
  • 2 red peppers, chopped
  • 2 courgettes, grated
  • 2 carrots, grated
  • 1 large pinch dried oregano
  • 2 bay leaves
  • 4 x 400 g tinned plum tomatoes
  • 1 small butternut squash, peeled and seeds removed, grated
  • sea salt
  • freshly ground black pepper

Method

Heat a large saucepan (big enough to hold all the ingredients) over a medium heat. Pour in a good lug of oil then add the onions, leek, celery, peppers, courgettes, carrots and herbs. Cook the whole lot slowly for about 20 minutes with the lid on, until all the vegetables are nice and soft but without any colour at all.

Add the tomatoes, squash, 500ml (17½fl oz) of water and a pinch of salt and pepper to the vegetables. Bring to the boil and simmer gently for about 30 minutes until the squash is soft.

Fish out the bay leaves and allow the sauce to cool slightly before blitzing with a hand-held blender until nice and smooth. Have a taste and season with a little more salt and pepper if needed".

Preparação
Lavar e descascar todos os legumes;
Ralar cenoura, picar cebola e alho francês, cortar tiras finas de lombardo, cubinhos de courgete;
Refogar em azeite os legumes, acrescentar cogumelos e milho;
Juntar tomate e oregãos;
Temperar com sal;
Adicionar a farinha e o creme vegetal;
Juntar o leite e mexer bem para envolver tudo;
Temperar com noz moscada;
Deixar cozer;
Ferver a água e cozer a massa lasanha;
Depois de cozida arrefecer em água fria;
Colocar a massa num tabuleiro e depois o preparado dos legumes;
Depois massa e assim por camadas até encher o tabuleiro;
Colocar queijo ralado no final;
Levar a forno médio para gratinar e acabar de confeccionar.

Sopa Juliana | Carapau grelhado com batata cozida | Laranja

Sopa Juliana

 100g de batata
 100g de couve portuguesa
 100g de cebola
 120g de abóbora
 120g de alho francês
 20ml de azeite

4 pessoas
Descasque, lave e corte em pedaços a batata, a cenoura, a cebola e a abóbora. Lave e corte em pedaços a couve portuguesa e o alho francês. Coloque todos estes ingredientes numa panela com água previamente aquecida e temperada com pouco sal e deixe cozer em lume brando. Passe a sopa com a varinha mágica. Depois de pronta, coloque o azeite e misture muito bem.

Carapau* grelhado com batata cozida

 480g de carapau
 720g de batata
 100g de grelos
 40g de alho
 40ml de azeite

4 pessoas
Descasque, lave e corte a batata em rodelas. Lave e corte os grelos. Numa panela coza a batata e os grelos em água. Quando estiverem cozidos, coe e está pronto a servir. Grelhe o carapau temperado com pouco sal e alho. Sirva num prato as batatas, os grelos e o carapau grelhado e tempere com um fio de azeite.
Para sobremesa descasque a laranja e parta-a em gomos (cerca de 170g de laranja por pessoa).

Creme de grão de bico* com couve-de-bruxelas*


 160g de grão de bico em lata
 120g de cenoura
 120g de cebola
 80g de couve-de-bruxelas congeladas
 20ml de azeite
 4 pessoas
Descasque, lave e corte em pedaços metade da cebola e a cenoura. Coloque todos estes ingredientes numa panela com água previamente aquecida e temperada com pouco sal e deixe cozer em lume brando, adicionando entretanto o grão-de-bico.

Passe a sopa com a varinha mágica. Lave a couve-de-bruxelas e adicione-a à sopa passada para cozer. Depois de pronta, coloque o azeite e misture muito bem.

Omolete* de alho-francês e cenoura* com arroz de espinafres*


 4 ovos
 80g de cebola
 120g de alho-francês
 40g de salsa
 120g de cenoura
 160g de arroz
 120g de espinafres
 40ml de azeite
4 pessoas
Omolete de alho-francês e cenoura 
Descasque, lave e pique metade da cebola

e a salsa. Descasque, lave e corte a cenoura em tiras bem fininhas. Lave e corte o alho-francês em tiras. Coza o alho-francês e a cenoura, e depois de cozidos escorra-os bem. Num tacho anti-aderente coloque o ovo mexido, a cebola, a salsa, a cenoura,
o alho-francês e o azeite. Espere até ficar com uma consistência firme. Vire com uma espátula e deixe cozinhar um pouco.

Arroz de espinafres
Descasque, lave e pique a restante cebola. Lave e corte os espinafres em pedaços.Coloque a cebola e um pouco de azeite numa panela. De seguida coloque água e quando ferver coloque o arroz e os espinafres e deixe cozer em lume brando, previamente temperado com pouco sal. Sirva num prato a omolete com o arroz de espinafres.

Para sobremesa o kiwi em rodelas (cerca de 130g de kiwi por pessoa).

Nota: Pode fazer a sua omolete como se fosse um crepe, rechear com os legumes e enrola-la fazendo um cilindro.

- Intervém na produção de ácidos nucleicos, no crescimento e reprodução;
- Previne malformações no tubo neural dos fetos.

Carência:
- Anemia megaloblástica (caracteriza-se por uma fraqueza geral, depressão e polineuropatia). Pode haver formas ligeiras de carência, que não dão todos os sintomas.

David Servan-Schreiber est psychiatre. Il a écrit plusieurs best-sellers, dont « Guérir », et « Anti-cancer » (Robert Laffont).
LA DÉPÊCHE DU DIMANCHE : Pourquoi avoir révélé que vous avez été atteint d'un cancer ?
David SERVAN-SCHREIBER : Pendant longtemps, je n'en ai pas parlé. Je gardais ma maladie confidentielle. J'ai fini par être convaincu par mes proches qui me disaient que mon expérience, d'autres approches de santé, pouvaient bénéficier à des malades. Et je ne regrette pas de l'avoir fait. J'ai rendu des services.
DDD : Vous avez fait une rechute. Guérit-on d'un cancer, ou bien faut-il continuer à vivre avec cette épée de Damoclès ?
D. S.-S. : Cela dépend des cas. Il y a des petits cancers dépistés tôt et opérés et pour lesquels on obtient parfois des guérisons. Et d'autres cancers qui ne se guérissent pas, ce qui est mon cas avec une tumeur au cerveau. Il faut vivre avec, en renforçant tout ce qui nourrit la vie dans son corps. Il faut tenir la maladie à distance.
DDD : Le nombre de cancers explose dans les pays occidentaux depuis les années 1940. Vous y voyez plusieurs explications. Lesquelles ?
D. S.-S. : Cela vient en partie du vieillissement de la population. De la systématisation du dépistage. Chez les enfants, le cancer progresse de 1 à 1,5 % par an. Il y a aussi des facteurs sociétaux. Comme le bouleversement de notre alimentation, la sédentarité. Avant guerre, les pesticides n'existaient pas ; la généralisation des contaminants chimiques contribue à la progression du cancer. La réduction massive du réseau social, qui est notre principale protection contre les effets négatifs des grandes crises de la vie sur notre corps, influe également beaucoup. Le manque d'exposition au soleil également. Tout cela est arrivé en même temps.
DDD : Vous avez été soigné par les méthodes conventionnelles. En proposez-vous une nouvelle dans notre livre ?
D. S.-S. : Non. L'opération et la chimiothérapie sont nécessaires. Mais il y a la tumeur, et le terrain. La médecine moderne doit s'occuper des deux.
DDD : Précisément. Vous donnez des conseils très précis pour rester en bonne santé : marcher, bien se nourrir. Les aliments de base ?
D. S.-S. : Très simplement, dans nos assiettes, il faut changer les proportions. Plutôt qu'un gros steak, un petit morceau de viande ou de poisson : 20 % de produits animaux, et 80 % de légumes. Les meilleurs légumes sont les choux, l'oignon, l'ail.. J'ajouterai les herbes, le thym, le romarin, le basilic. Je préconise de boire trois tasses de thé vert par jour, en dehors des repas, et d'introduire le curcuma dans son assiette. Le curcuma est l'inflammatoire naturel le plus efficace : un quart de cuillère à café trois par semaine suffit.
DDD : Vous êtes psychiatre. Le moral, dans le combat contre la maladie, cela compte énormément, non ?
D. S.-S. : Bien sûr. Ce sujet est d'ailleurs un chapitre que j'ai entièrement repris dans mon livre pour être très clair. Le stress ne cause pas le cancer, mais on voit que certaines réponses au stress, le désespoir prolongé, interfèrent avec la capacité du corps à se défense, à mieux lutter. Une femme atteinte d'un cancer et qui va être soutenue par un réseau de copines va multiplier ses chances de guérison.
DDD : Pensez-vous que les chercheurs trouveront l'arme absolue contre le cancer ?
D. S.-S. : Non. Il n'y aura pas de traitement miracle. Le cancer, c'est un peu comme le dérèglement climatique : la conclusion ultime d'une mauvaise gestion des ressources. Il va falloir vivre avec, mobiliser les ressources de son corps, l'aider à se détoxifier.

David Servan-Schreiber est médecin-psychiatre. Il a enseigné à la faculté de médecine de Pittsburg, aux Etats-Unis. C'est là qu'il a découvert qu'il avait un cancer, ce qu'il n'a révélé que récemment. Ses livres, «Guérir», puis «Anticancer», sont devenus des best-sellers mondiaux. David Servan-Schreiber vient de publier une nouvelle édition de son dernier ouvrage. Il vit à Paris, et continue d'enseigner aux Etats-Unis. Il est professeur adjoint au MD Anderson Cancer Center de Houston au Texas."

20 New Anticancer Rules

"Michael Pollan's recent little gem of a book "Food Rules" inspired me to compile my own "rules" about what I'd like every person to know about how they can help avoid cancer - or slow it down if they have it.

FOOD RULES

1. Go retro: Your main course should be 80 percent vegetables, 20 percent animal protein, like it was in the old days. Opt for the opposite of the quarter pounder topped with a token leaf of iceberg lettuce and an anemic tomato slice. Meat should be used sparingly for taste, as when it used to be scarce, and should not be the focus of the meal.

2. Mix and match your vegetables: Vary the vegetables you eat from one meal to the next, or mix them together -- broccoli is an effective anticancer food, and is even more effective when combined with tomato sauce, onions or garlic. Get in the habit of adding onions, garlic or leeks to all your dishes as you cook.

3. Go organic: Choose organic foods whenever possible, but remember it's always better to eat broccoli that's been exposed to pesticide than to not eat broccoli at all (the same applies to any other anticancer vegetable).

4. Spice it up: Add turmeric (with black pepper) when cooking (delicious in salad dressings!). This yellow spice is the most powerful natural anti-inflammatory agent. Remember to add Mediterranean herbs to your food: thyme, oregano, basil, rosemary, marjoram, mint, etc. They don't just add flavor, they can also help reduce the growth of cancer cells.

5. Skip the potato: Potatoes raise blood sugar, which can feed inflammation and cancer growth. They also contain high levels of pesticide residue (to the point that most potato farmers I know don't eat their own grown potatoes).

6. Go fish: Eat fish two or three times a week - sardines, mackerel, and anchovies have less mercury and PCBs than bigger fish like tuna. Avoid swordfish and shark, which the FDA says pregnant women should not eat because they contain a high concentration of contaminants.

7. Remember not all eggs are created equal: Choose only omega-3 eggs, or don't eat the yolks. Hens are now fed on mostly corn and soybeans, and their eggs contain 20 times more pro-inflammatory omega-6 fatty acids than cell-growth regulating omega-3s.

8. Change your oil: Use only olive and canola oil in cooking and salad dressings. Go through your kitchen cabinets and throw out your soybean, corn and sunflower oils. (And no, you can't give them to your neighbors or your relatives... They're much too rich in omega-6 fatty acids!)

9. Say "Brown is beautiful": Eat your grains whole and mixed (wheat with oats, barley, spelt, flax, etc.) and favor organic whole grains when possible since pesticides tend to accumulate on whole grains. Avoid refined, white flour (used in bagels, muffins, sandwich bread, buns, etc.) whenever possible, and eat white pasta only al dente.

10. Keep sweets down to fruits: Cut down on sugar by avoiding sweetened sodas and fruit juices, and skipping dessert or replacing it with fruit (especially stone fruits and berries) after most meals. Read the labels carefully, and steer clear of products that list any type of sugar (including brown sugar, corn syrup, etc.) in the first three ingredients. If you have an incorrigible sweet tooth, try a few squares of dark chocolate containing more than 70% cocoa.

11. Go green: Instead of coffee or black tea, drink three cups of green tea per day. Use decaffeinated green tea if it gets you too wired. Regular consumption of green tea has been linked to a significant reduction in the risk for developing cancer.

12. Make room for exceptions. What matters is what you do on a daily basis, not the occasional treat.

NON-FOOD RULES

1. Get physical: Make time to exercise, be it walking, dancing or running. Aim for 30 minutes of physical activity at least 5 days a week. This can be as easy as just walking part of the way to the office, or the grocery store. A dog is often a better walking partner than an exercise buddy. Choose an activity you enjoy; if you're having fun, you're more likely to stick with it.

2. Let the sun shine in: Try to get at least 20 minutes of daily sun exposure (torso, arms and legs) without sunscreen, preferably at noon in the summer (but take care to avoid sunburns!). This will boost your body's natural production of Vitamin D. As an alternative: discuss the option of taking a Vitamin D3 supplement with your doctor.

3. Banish bad chemicals: Avoid exposure to common household contaminants. You should air our your dry-cleaning for two hours before storing or wearing it; use organic cleaning products (or wear gloves); don't heat liquids or food in hard plastics; avoid cosmetics with parabens and phthalates; don't use chemical pesticides in your house or garden; replace your scratched Teflon pans; filter your tap water (or used bottled water) if you live in a contaminated area; don't keep your cell phone close to you when it is turned on.

4. Reach out (and touch someone!): Reach out to at least two friends for support (logistical and emotional) during times of stress, even if it's through the internet. But if they're within arms reach, go ahead and hug them, often!

5. Remember to breathe: Learn a basic breathing relaxation technique to let out some steam whenever you start to feel stressed.

6. Get involved: Find out how you can best give something back to your local community, then give it.

7. Cultivate happiness like a garden: Make sure you do one thing you love for yourself on most days (it doesn't have to take long!)."

  • Açafrão das Índias;
  • Couve;
  • Bróculos;
  • Chá verde;
  • Bagas;
  • Lentilhas;
  • Feijão;
  • Cereais;
  • Soja;
  • Tofu;
  • Alho, cebolas e alho-francês (diariamente); e,
  • Não mais do que 250g de carne vermelha por semana.
