Mexican breakfast

Chilli tomato stew, eggs and cheese wrapped in tortillas.

Of an adult's reference intake

Ingredients
olive oil
1 onion , peeled and finely sliced
2 cloves of garlic , peeled and finely sliced
2 red peppers , deseeded and finely sliced
2 fresh red or orange chillies , deseeded and finely sliced
1 large dried chilli
3 fresh bay leaves
sea salt and freshly ground black pepper
2 x 400 g tins of chopped tomatoes
2 large tomatoes , sliced
6 large eggs , preferably free-range or organic
6 tortillas
Cheddar cheese to serve

Method
The Mexican name for this dish is ‘huevos rancheros’ – eggs with chillies, tomatoes and peppers in burritos. It’s absolutely great if you've got a few mates round, and even better if you've got a hangover you’re trying to shake off. If you wanted to take this dish one step further, for a late brunch you could serve it with black beans, some steamed rice and a bottle of Tabasco or chilli sauce beside it. Give it a go.
Get a large frying pan (make sure you’ve got a lid to go with it) on a high heat and add several good lugs of olive oil. Add the onion, garlic, peppers, fresh and dried chillies, bay leaves and a good pinch of salt and pepper. Stir and cook for 15 minutes to soften and caramelize the veg. Pour in your tinned tomatoes and use a spoon or potato masher to break them up a bit. Bring to the boil, then turn down to a medium heat and cook for a further 5 minutes so the sauce starts to reduce down.
When you’ve got a nice thick tomato stew consistency, have a taste and add a pinch more salt and pepper if you think it needs it. Lay your sliced tomatoes over the top of the mixture, then use a spoon to make small wells in the tomato stew, and crack in your eggs so they poach in the thick, delicious juices. Try to crack them in as quickly as you can so they all get to cook for roughly the same amount of time. Season from a height, put the lid on and let the eggs cook for around 3 to 4 minutes. Warm your tortillas while this is happening. You can pop them into the oven at 180ºC/350ºF/gas 4 for a few minutes, microwave them for a few seconds or even lay them over the lid of the pan so they heat up as the eggs cook.
Take the lid off and check your eggs by giving them a poke with your finger. When they’re done to your liking, turn the heat off and take the pan to the table with your warmed tortillas, your Cheddar and a grater so everyone can get involved and make their own. Personally, I like to grate a bit of cheese right on to a warm tortilla, spoon an egg and some of the wonderful tomato stew on top, wrap it up, and eat it right away. What a beautiful way to wake up!

O meu molho de tomate

Ingredientes:
  • 3 colheres de sopa de azeite;
  • 2 cebolas médias, picadas;
  • 2 folhas de louro;
  • 1 pimento vermelho, cortado em pedaços pequenos;
  • 1 piri-piri (gindungo) fresco ou seco;
  • 1 litro de concentrado de tomate ou 1 kg de tomate pelado ou 1 kg de tomate fresco, depois de pelado; e,
  • 200 ml de água quente.


Modo de fazer:
  1. Num tacho grande, colocar todos os ingredientes, excepto os dois últimos;
  2. Refogar em lume médio a brando, até a cebola estar cozinhada, mas sem deixar lourar;
  3. Acrescentar o concentrado de tomate ou tomate pelado ou tomate fresco e a água;
  4. Cozer em lume brando, cerca de uma hora. Retirar o louro e triturar, com a varinha mágica ou outra máquina, todos os ingredientes, repor o louro e deixar cozer mais 15 minutos.

Dicas:
  • Congelar o molho de tomate em recipientes de 200 ml, para usar em receitas várias;
  • Podem usar tomate pelado, ou tomate muito maduro depois de retirar a pele e as sementes.

Retirar a pele do tomate:
  1. Aquecer água até ferver;
  2. Lavar o tomate e fazer um corte muito superficial, em cruz, no topo do tomate (oposto ao pé do tomate):
  3. Colocar o tomate numa tijela e verter a água a ferver sobre ele;
  4. Retirar passados 10 segundos, descascar com auxílio de um garfo e faca. A pele deverá sair facilmente, se não basta voltar a submergir o tomate na água quente e esperar mais alguns segundos.

'Full of veg' tomato sauce

"This is a great sauce to have up your sleeve. When it's made properly it will have a lovely, sweet flavour just like tomatoes. After your children get used to eating it, you can whiz the vegetables up a bit less each time until, eventually, you won't have to whiz it at all. This recipe makes quite a big batch. I tend to make loads at one time, let it cool completely, then bag it up and freeze it.

Ingredients

  • olive oil
  • 2 small onions, peeled and chopped
  • 1 small leek, chopped and washed
  • 2 sticks celery, trimmed and chopped
  • 2 red peppers, chopped
  • 2 courgettes, grated
  • 2 carrots, grated
  • 1 large pinch dried oregano
  • 2 bay leaves
  • 4 x 400 g tinned plum tomatoes
  • 1 small butternut squash, peeled and seeds removed, grated
  • sea salt
  • freshly ground black pepper

Method

Heat a large saucepan (big enough to hold all the ingredients) over a medium heat. Pour in a good lug of oil then add the onions, leek, celery, peppers, courgettes, carrots and herbs. Cook the whole lot slowly for about 20 minutes with the lid on, until all the vegetables are nice and soft but without any colour at all.

Add the tomatoes, squash, 500ml (17½fl oz) of water and a pinch of salt and pepper to the vegetables. Bring to the boil and simmer gently for about 30 minutes until the squash is soft.

Fish out the bay leaves and allow the sauce to cool slightly before blitzing with a hand-held blender until nice and smooth. Have a taste and season with a little more salt and pepper if needed".

Carbonara Vegetariana

Tempo de preparação: 20 minutos

Ingredientes:
  • 200 g de cogumelos frescos ou uma lata de cogumelos (150 g),
  • uma cebola grande,
  • azeite,
  • uma folha de louro,
  • 200 g de espinafres frescos ou 400 g de espinafres congelados,
  • pimenta preta moída,
  • uma malagueta pequena,
  • 400 g de massa (espirais ou macarronete cortado),
  • 1 embalagem, 200 ml, de natas para cozinhar (18% gordura) ou natas ácidas (à venda no Supermercado Aldi e em lojas de produtos de países de Leste).

Modo de preparação:
Aquece-se uma wok (frigideira chinesa), adicionam-se os cogumelo. Quando a água evaporar, adiciona-se azeite e a folha de louro. Quando os cogumelos começam alourar adiciona-se a cebola cortada em gomos grosseiros, uma pitada de sal, uma malagueta e um pouco de pimenta preta moída.
Quando a cebola estiver loura desliga-se o lume, adicionam-se os espinafres frescos, coloca-se uma tampa e deixam-se cozer no calor acumulado.
Coze-se a massa em água a ferver, até ficar al dente (cozida mas ainda dura).
Deita-se a massa sobre os vegetais, adicionam-se as natas, mistura-se e serve-se.

A carbonara pode ser congelada, caso todos os ingredientes nunca tenham sido previamente congelados.
Os espinafres frescos podem ser substituídos por a versão congelada, neste caso devem ser adicionados à mistura de vegetais e cozinhados durante mais tempo.

Variantes: em vez de espinafres adicionar cenoura ralada, pimento vermelho e uma lata de atum em água; trocar os espinafres por bróculos cozidos ao vapor; acrescentar courgete, etc.

Demolhar bacalhau pelo menos 12h;
Descascar alho, cebola e cenoura;
Picar alho e pimentos, cortar meias luas de cebola
e ralar cenoura;
Refogar em azeite a cebola, alho, cenoura, pimentos, louro;
Acrescentar migas de bacalhau e envolver;
Colocar os espinafres;
Adicionar a farinha e o creme vegetal;
Juntar o leixe e mexer bem para envolver tudo;
Temperar com noz moscada e sal;
Deixar cozer;
Ferver a água e cozer a massa lasanha;
Depois de cozida arrefecer em água fria;
Colocar a massa num tabuleiro e depois o preparado
do bacalhau;
Depois massa e assim por camadas até encher o tabuleiro;
Colocar queijo ralado no final;
Levar a forno médio para gratinar e acabar de confeccionar.

Baked Spaghetti with Homemade Ricotta

I know this Baked Spaghetti dish has a lot of moving parts but it can easily be simplified by substituting some of the from-scratch ingredients with your favorite store-bought items. However, once you make fresh ricotta cheese you will never return to the store for it!

Homemade Ricotta

1 gallon whole or raw milk
1/3 cup of white vinegar
1 teaspoon salt

1. Heat milk in a large, heavy-bottomed pot until it reaches 185 degrees.
2. Remove from heat and add the vinegar and salt, stirring gently.
3. Cover the pot and let stand for two hours.
4. Carefully transfer mixture to a cheese-cloth-lined colander.
5. Let drain for about two hours.
If you are fortunate enough to have any leftover ricotta from this bake, it can be refrigerated in an air tight container for up to a week. Or you might just want to make extra. May I suggest some Ricotta Pancakes? Add a tablespoon of ground food-grade lavender for a nice twist.

6 large eggs
3 1/2 cups semolina flour, sifted
2 tablespoons ice cold water
1 tablespoon olive oil
1 pinch of sea salt

1. Separate the egg yolks from the whites.
2. Place the yolks into a measuring cup.
3. Slowly add the egg whites to about 7/8 of a cup.
4. Gently whisk together the egg mixture and olive oil.
5. In a large bowl, slowly add the egg and oil mixture to the semolina flour.
6. Knead dough for about 10 minutes.
7. Roll dough into a ball, wrap with a towel and let rest for 30 minutes.
8. Roll out spaghetti through a pasta machine.
9. Bring salted water to a boil in a large pot.
10. Cook pasta for about 2 minutes and drain.

Roasted Tomato Marinara

10 pounds fresh tomatoes
2 yellow onions, peeled and diced
2 shallots, chopped
6 gloves of garlic, chopped
1/2 cup red wine
1 tablespoon of dried basil
1 tablespoon of dried oregano
2 tablespoons of dried sage powder
1 teaspoon of dried thyme
1 bay leaf
1 or 2 tablespoons of chili powder
1 teaspoon of sugar
Olive oil

1. Heat a large saute pan over high heat.
2. Add the tomatoes, don't move them until they burn and blister. Then flip them over, repeating until the tomatoes are charred and softened.
3. In a large sauce pot, warm some olive oil over a medium-high heat.
4. Add the onions, shallots, and garlic. Cook until softened then remove from heat.
5. Add the tomatoes.
6. Deglaze the saute pan with some of the red wine, add it to the sauce pot.
7. Add the remaining red wine, the dried herbs, and the chili powder.
8. Carefully blend with an immersion blender or in batches through a food processor.
9. Add bay leaf and cook at a very low simmer for 2 hours.
10. Finish with sugar.
11. Salt and pepper to taste once cooled.

Homemade ricotta cheese
Fresh spaghetti, cooked
Roasted tomato sauce
1 bunch of fresh basil, washed
1 cup of mozzarella cheese, grated

1. Using a 9 x 13 dish, layer the sauce, ricotta and spaghetti as you would a lasagna.
2. Top with mozzarella and bake at 350°F until the sauce is bubbly.
3. Finish with fresh basil leaves and serve.
This dish is simple in its construction but with all of the fresh ingredients, it is bursting with flavor. Still, don't steer away from modifying it. Spinach and roasted red peppers would be a quick compliment, as would mushrooms.
