Elixir anti-gripe

Fight the Cold Elixir, by Megan Morris | 10.12.2016

Ingredientes:
  • um limão, cortado às rodelas;
  • um pedaço de gengibre, com cerca de 10 g, descascado e finamente cortado;
  • uma colher (chá) de açafrão das índias em pó;
  • um pau de canela ou uma colher (chá) de canela;
  • 1/4 colher (chá) de pimenta cayenne;
  • uma pitada de pimenta preta moída;
  • uma ou duas colheres (sopa) de mel;
  • quatro a seis chávenas de água.

Modo de preparação:
Coloque todos os ingredientes, com excepção do mel, numa panela. Aqueça até ferver, diminua o calor e deixe cozinhar durante 10 minutos.
Desligue o fogo, quando arrefecer um pouco adicione o mel.
Coloque num termos e beba ao longo do dia.

AFGHAN SALAD

"Also known as Salata. This refreshing and colourful tomato, carrot and onion salad is light and crunchy.

SERVE 4
PREP 15 minutes

Ingredients
2-3 large tomatoes, finely chopped (260g)
50g fresh coriander, roughly chopped
20g fresh mint, roughly chopped
1 lemon, juice and finely grated zest
1 tbsp extra-virgin olive oil
good pinch pepper
1 large red onion, finely diced (180g)
half cucumber, finely diced (160g)
2 large carrots, grated (250g)

Method
Add the tomatoes to a bowl with the coriander, mint, lemon juice, olive oil and pepper and mix well.
Add the red onion, cucumber and carrot. Mix well and serve.

Chef's tips
Try with different herbs such as parsley, basil or dill.Serve with grilled meat, fish or poultry.Great as part of a buffet or for a packed lunch".

APPLE AND RAISIN CHELSEA BUNS

"MAKES 16
PREP 30 minutes + 90 minutes rising
COOK 20-25 minutes + 15 minutes for filling

Ingredients
250g wholemeal flour
200g plain flour
20g caster sugar
7g sachet fast-acting yeast
50ml rapeseed oil (reserve 2 tsp to oil bowl and baking sheet)
1 egg, beaten
200ml milk, warmed to lukewarm (reserve dash to brush buns)
1 tsp honey

For the filling:
2 dessert apples, peeled, cored and roughly chopped
1 tbsp water
2 heaped tsp ground cinnamon
2–3 tsp granulated sweetener
70g raisins

Method
Mix the wholemeal and plain flour with the sugar and yeast. Make a well in the middle.
Add the oil, egg and half the milk. Mix well, gradually adding the rest of the milk until it comes together as a dough.
Turn out the dough onto a floured surface and knead for five minutes until it becomes elastic. Place into an oiled bowl, cover with cling film and leave in a warm place for 1 hour to double in size.
Meanwhile, make the filling: add the apples to a pan with the water, cover and cook for 10 minutes over a low to medium heat, mashing with a fork occasionally until they are a soft pulp. Remove from the heat and add the cinnamon, sweetener and raisins. Mix well, cover and leave to cool.
‘Knock back’ the dough by shaping to its original size, then turn out onto a lightly floured surface. Roll out into a rectangle, ½cm thick (approximately 48x30cm).
Spread the apple/raisin mixture over the dough, leaving a 2–3cm margin along the longest top edge.
Tightly roll the dough into a cylinder with the seam on the bottom, then cut into 16 pieces approximately 3cm thick.
Place the buns onto a lightly oiled baking sheet, cover with a tea towel and leave to rise for another 30 minutes. Meanwhile, preheat the oven to 180°C /gas 4.
Brush the buns with the milk and bake for 20–25 minutes until risen and golden. Remove from the oven, brush with honey and allow to cool.

Chef's tips
You could use sultanas, currants or a mixture of dried fruit.Try adding some grated lemon or orange zest to the filling or use mixed spice in place of cinnamon".

Peras Salteadas com Morangos e Nozes

Ingredients
1 teaspoon coriander seeds
1 teaspoon cumin seeds
1 thumb-sized piece of fresh ginger
2 cloves of garlic
olive oil
2 courgettes
fine sea salt
1 large bunch of fresh coriander
1 x 400 g tin of chickpeas, drained
40 g fine breadcrumbs
freshly ground black pepper

For the minty yoghurt dip:
½ a cucumber
3 sprigs of fresh mint
4 tablespoons organic soya yoghurt
1 lemon

For the nutty sauce:
1 small onion
1 clove of garlic
100 g cashew nuts
140 ml light coconut milk
2 tablespoons smooth peanut butter


Method
Toast the coriander and cumin seeds in a small frying pan over a medium heat for 2 to 3 minutes, then tip into a pestle and mortar and bash to a coarse powder.
Peel and finely chop the ginger and garlic, then add to the frying pan over a medium heat with a splash of oil. Fry for 2 to 3 minutes, or until golden, then place into a food processor with the toasted spices.
Coarsely grate the courgettes, place into a colander in the sink, then sprinkle with a good pinch of fine sea salt. Squeeze the mixture together with your hands to get rid of the excess moisture, then add to the processor. Pick the coriander leaves and set aside, then add half the coriander stalks to the processor with the chickpeas, breadcrumbs and a pinch of salt and pepper. Pulse until combined, but not smooth – you want to retain a bit of texture.
Transfer to a clean work surface then, with wet hands, divide and shape the mixture into eight little fat fingers. Place onto a tray, then pop in the fridge to chill for around 20 minutes. 
Meanwhile, make the minty yoghurt dip. Halve the cucumber lengthways, scoop out and discard the watery seeds, then roughly chop. Pick and finely slice the mint leaves, then place into a bowl with the cucumber, yoghurt and a squeeze of lemon juice. Mix well.
To make the nutty sauce, peel and finely slice the onion and garlic, then finely slice the remaining coriander stalks. Place into a large frying pan over a medium heat with a splash of oil, then cook for a few minutes, or until golden. Add the cashew nuts and toast for a further 2 to 3 minutes, then transfer to a food processor. Add the coconut milk and peanut butter, then blitz until thick and smooth.
Return the large frying pan to a medium heat with a splash of oil. Once hot, add the kofte and cook for around 2 minutes, or until golden and piping hot through, turning regularly. Divide the kofte between your plates, tear over the coriander leaves, then serve with the nutty sauce and minty yoghurt dip and lemon wedges for squeezing. Delicious with pitta breads or fluffy rice.

Ingredients
300 g Lincolnshire Poacher cheese
a small bunch of  fresh mint, leaves picked
250 g rock salt
24 shallots
a few sprigs of  fresh thyme

For the pastry:
500 g plain flour, plus extra for dusting
250 g cold unsalted butter, cubed
sea salt
white pepper
1 large free-range egg, beaten
For the filling:
olive oil
a bunch of fresh thyme
1 whole nutmeg , for grating
1 lemon
1.5 kg courgettes, a mixture of yellow and green if you can get them, finely sliced
sea salt
freshly ground pepper


Method
You won’t believe how tasty the courgettes get with this method of cooking – it really does take them to another level. You’ve got to find some Lincolnshire Poacher, it’s an amazing cheese made by the very talented Jones brothers, Simon and Tim (see www.lincolnshirepoachercheese.com). The pastry is rich and amazing, so embrace the fact that it’s really crumbly and will definitely break as you’re making it. I’m serving this with a lemony salad and sweet salt-baked shallots, which will get caramelized and gorgeous and pick up the seasoning from the bed of salt. This method is also a great one for beetroots, so if you like this, try that.
Preheat the oven to 180°C/350°F/gas 4. Blitz the flour and butter in a food processor with a pinch of salt and a few good pinches of pepper until the mixture resembles breadcrumbs. Tip on to a work surface, make a well in the centre and add 100ml of cold water. Gently mix until it starts to come together, then – most importantly for a short, crumbly pastry – have the confidence to only just press, pat and almost hug it together to form a rough scruffy ball. Please don’t be tempted to knead the dough or it won’t be short and crumbly. Pop it into a floured bowl, cover with clingfilm and put into the fridge to chill while you make the filling.
Put a drizzle of olive oil into a large pan on a medium heat and pick in the leaves from half the bunch of thyme. Add a few gratings of nutmeg, the zest of half the lemon, the sliced courgettes and a good pinch of salt and pepper. Cook gently (the courgettes will cook down and become easier to handle), stirring occasionally, for around 25 minutes. Then turn the heat down to low and cook for another 20 minutes, so the courgette mixture becomes dense and the flavours really intensify and sweeten. Allow to cool a little, finely chop and crumble in the cheese, then chop and add the mint leaves. Set aside.
Halve the pastry and roll each half into a circle just under 1cm thick and slightly larger than the pie dish you’ve chosen (roughly 23cm diameter x 4cm deep). Don’t worry if the pastry breaks up – that’s normal. Just patch it. Roll one of the circles around the rolling pin and carefully unroll it over the pie dish. Gently press the pastry into the corners and sides of the dish, then spoon and spread all your courgette mixture into the dish. Carefully unroll the pastry lid over the top, then flour your thumb and forefinger and gently pinch and crimp the edges together. Trim off any excess pastry and brush the top of the pie with the beaten egg.
Now simply throw the rock salt into a roasting tray with the shallots, still with their skins on, and a few thyme tips. Put the pie right at the bottom of the oven, with the tray of shallots above. Cook for 1 hour, or until the pie is golden, then allow to cool and serve with those soft roasted shallots.
PS: All the leftover salt from baking the shallots can be bashed up and reused.

Bolachas de Citrinos

Ingredientes:
  • 100gr de manteiga em temperatura ambiente;
  • 225gr de açúcar;
  • 2 ovos;
  • 450gr de farinha de trigo;
  • 1/2 colher de chá de fermento em pó;
  • 1 pitada de sal; e,
  • raspa e sumo de 1 limão ou laranja.
Misture a manteiga e o açúcar, com a batedeira, até ficar uma mistura fofa. Adicionar os ovos. Peneirar a farinha, adicionar o sal e o fermento em pó Adicionar ao preparado lentamente, com a batedeira em velocidade baixa, intercalando com a raspa e o sumo de limão/laranja.

Formar uma bola da massa, colocar num recipiente, por exemplo um tupperware, e levar ao frigorífico durante uma hora.
Estender a massa com o rolo, sobre uma superfície polvilhada com farinha, cortar as bolachas com formas. Colocar num tabuleiro, forrado com papel vegetal, colocar no forno pré aquecido a 180ºC, durante cerca de 10 minutos, até as extremidades começarem a ficar douradas.
Colocar sobre uma superfície e deixar arrefecer.
As bolachas podem ser guardadas num local seco, fechadas num recipiente hermético.

Salada de Courgetes de Michela Chiappa

Ingredientes

  • 4 courgetes
  • 1–2 piri-piris frescos
  • 1 limão
  • azeite
  • ½ colher (chá) de mostarda em pó
  • sal
  • algumas folhas de manjericão

Preparação

Usando um descascador, corte as courgetes longitudinalmente em tiras longas e finas. Em seguida, pique finamente o piri-piri e adicione com as courgetes numa tigela.

Num pequeno jarro, coloque o sumo de limão e cubra com o dobro da quantidade de azeite extra virgem. Adicione a mostarda em pó e uma pitada de sal, misture bem e despeje sobre a salada. Envolva os ingredientes, em seguida, espalhe as folhas de manjericão e sirva imediatamente.

Potatoes, mozzarella, rosemary, thyme & tomato pizza topping

Ingredients

  • 6 tablespoons tomato sauce
  • 4 new potatoes, cooked
  • 1 small handful fresh rosemary leaves
  • 1 teaspoon thyme tips
  • extra virgin olive oil
  • lemon juice
  • salt
  • freshly ground black pepper
  • 50 g mozzarella

Method

Recipe for pizza dough and tomato sauce can be found here.

Smear the tomato sauce evenly over the pizza base. Slice the potatoes into 0.5cm/¼ inch thick slices and toss in a bowl with the rosemary, thyme, a good lug of olive oil, a small squeeze of lemon juice and a pinch of salt and pepper. Scatter them over the pizza base and put small torn-up pieces of mozzarella into the gaps. Cook until crisp and golden.

Panna cotta au citron vert sans sucre ni gélatine de Christophe Michalak

Ingrédients:

  • 50 cl de crème liquide
  • 2 citrons verts
  • 30 g de fructose (au rayon diététique)
  • 1 fruits rouges

Préparation :

Faites bouillir 50 cl de crème liquide, ajoutez le zeste de 2 citrons verts en lanières, 30 g de fructose et laissez infuser 30 mn.
Filtrez puis ajoutez 40 g de jus de citron vert frais.
Coulez la préparation dans six verres et réservez une nuit au réfrigérateur.
Servez le lendemain garni de fruits rouges.

Tomates farcies (olives-anchois)

Ingrédients:

Préparation :

1. Pelez les oignons blancs ; rincez les courgettes, l’aubergine et le poivron. Coupez tous ces légumes en petits dés. Dénoyautez les olives et coupez-les en copeaux.
2. Rincez les anchois en les frottant bien sous l’eau afin de les dessaler, puis hachez leur chair.
3. Allumez le four à 170 °C (th. 5,5). Rincez les tomates, découpez-leur un chapeau, puis videz-les de leur eau et de leurs graines et rangez-les dans un plat beurré.
4. Faites chauffer un filet d’huile d’olive dans une poêle très chaude et ajoutez les cubes de légumes. Faites-les cuire 2 mn, ils doivent rester bien croquants. Retirez du feu et ajoutez les anchois hachés, les copeaux d’olives et l’estragon en l’effeuillant. Salez et poivrez.
5. Farcissez les tomates, posez leur chapeau dessus et déposez le reste de beurre sur chaque tomate. Arrosez le tout du reste d’huile d’olive et glissez au four. Laissez cuire 45 mn.
6. Pressez le citron sur les tomates dès qu’elles sortent du four et servez aussitôt.

Sardines grillées au four

Pelez les gousses d’ail, hachez-les finement et mettez-les dans un bol avec l’huile d’olive, le jus du citron, les feuilles de sauge écrasées et le thym. Ajoutez un peu de sel et de poivre, et réservez.
Allumez le four sur th. 7/210°, sortez la plaque et tapissez-la de papier d’aluminium. Passez les sardines sous un filet d’eau froide en grattant un peu la peau de la queue vers la tête pour enlever les écailles. Retirez la tête en entraînant les intestins, puis glissez les doigts le long de l’arête pour détacher la chair des deux côtés.
Coupez l’arête à la base de la queue et laissez le petit bout de queue.
Mettez les sardines à plat sur l’aluminium huilé, pratiquez 2 ou 3 petites incisions en travers des flans des sardines de chaque côté.
Arrosez-les de l’huile aromatisée réservée, baissez le th. à 6/180° et faites-les cuire dans le four pendant 8mn (pour des sardines de taille moyenne). Ce n’est pas la peine de les retourner, car elles cuisent aussi par-dessous".

Old-fashioned sweet shortcrust pastry

"This pastry is perfect for making apple and other sweet pies. Even if you've never made pastry before, as long as you stick to the correct measurements for the ingredients and you follow the method exactly, you'll be laughing. The one place where you can experiment is with flavouring. If you don't fancy using lemon zest, try another dry ingredient like orange zest instead. Or a pinch of cinnamon, nutmeg or cocoa powder. Vanilla seeds are great too. Just remember to be subtle and don't go overboard with any of these flavours! Try to be confident and bring the pastry together as quickly as you can – don't knead it too much or the heat from your hands will melt the butter. A good tip is to hold your hands under cold running water beforehand to make them as cold as possible. That way you'll end up with a delicate, flaky pastry every time.

  • 500 g organic plain flour, plus extra for dusting
  • 100 g icing sugar, sifted
  • 250 g good-quality butter, cut into small cubes
  • zest of 1 lemon
  • 2 large free-range eggs, beaten
  • 1 splash milk

Method

Sieve the flour from a height on to a clean work surface and sieve the icing sugar over the top. Using your hands, work the cubes of butter into the flour and sugar by rubbing your thumbs against your fingers until you end up with a fine, crumbly mixture. This is the point where you can spike the mixture with interesting flavours, so mix in your lemon zest.

Add the eggs and milk to the mixture and gently work it together till you have a ball of dough. Flour it lightly. Don't work the pastry too much at this stage or it will become elastic and chewy, not crumbly and short. Flour your work surface and place the dough on top. Pat it into a flat round, flour it lightly, wrap it in clingfilm and put it into the fridge to rest for at least half an hour".

Easy Steamed Fish Packets

Ingredients

    2 leeks, thinly sliced
    2 red or yellow bell peppers, cored,
    seeded, and thinly sliced
    1 cup thinly sliced button mushrooms
    1 tbsp chopped fresh parsley, or 1 tsp
    dried
    1 tsp chopped fresh thyme
    1 pound sole fillets (or another whitefleshed
    fish), cut into 4-ounce
    portions
    2 lemons, zested and cut in half

Directions

The protein stays moist without any added fat, and the herbs and fish lend flavor to the vegetables. Be sure to slice your vegetables thinly to ensure even cooking. We used peppers, mushrooms, and leeks here; but you can choose your favorite vegetables. Thinly sliced peppers, asparagus, carrots, celery, onions, zucchini, and green beans are all good choices. Switch up the herbs and spices, too: garlic, basil, or oregano will all work well.
The best thing about this recipe: because everything is cooked in the parchment, cleanup is a breeze!

1. Preheat the oven to 450° F. In a small bowl, mix together the leeks, bell pepper, and mushrooms. In another small bowl, mix together the parsley and thyme.
2. Fold four sheets of 15" x 15" parchment paper in half. Coat one half with nonstick cooking spray and place on a baking sheet, uncoated side down (if you have a griddle that fits across two burners, you can use that in place of the baking sheet). In the center of the sprayed side of each piece of parchment, place 1 fish fillet, one-quarter of the vegetables, lemon zest, and herbs. Juice 1 lemon half over each mixture. Fold over the left side of the parchment. Crimp the edges to form a packet.
3. Place the baking sheet across two burners on the stovetop and set to moderate heat. Once the liquid inside each packet starts to bubble, transfer the pan to the oven. Bake for 8 to 10 minutes, depending on the thickness of the fish. A general rule of thumb is 10 minutes per inch of thickness".

Green Bean and Pasta Salad

  1. Cook the pasta according to the package directions, adding the green beans during the last 3 minutes of cooking. Drain and run under cold water to cool.
  2. Toss the cooled pasta and green beans with the red beans, parsley, Parmesan, olive oil, lemon juice, ½ teaspoon kosher salt, and ¼ teaspoon black pepper. Divide the salad between 2 containers and refrigerate for up to 1 day.

Grilled Shrimp With Lemony Potato Salad

  1. Place the potatoes in a medium pot and add enough cold water to cover. Bring to a boil and add 2 teaspoons salt.
  2. Reduce heat and simmer until tender, 12 to 15 minutes. Drain, run under cold water to cool, and cut into quarters.
  3. In a bowl, whisk together the sour cream, lemon juice, ¾ teaspoon salt, and ¼ teaspoon pepper. Add the potatoes, celery, and chives. Toss to combine.
  4. Meanwhile, heat grill to medium-high. In a bowl, toss the asparagus with 1 tablespoon of the oil and ¼ teaspoon each salt and pepper. In a second bowl, toss the shrimp with the seafood seasoning and the remaining tablespoon of oil.
  5. Grill the asparagus, turning occasionally, until tender, 6 to 8 minutes.
  6. Grill the shrimp until opaque throughout, 1 to 2 minutes per side. Serve with the asparagus and the potato salad.

    "INGRÉDIENTS

    1 boîte de conserve de pois chiches (En France c'est environ 265g poids net égoutté) Le jus d'un demi-citron 3 cuillères à soupe d'huile d'olive 1 demi-cuillère à café de tahini ou tahiné (appelé aussi pâte ou crème de sésame) optionnel 1 gousse d'ail Sel (mais peu car les pois chiches en conserve en contiennent déjà)

    RECETTE Hummus fait maison

    Rincer les pois chiches sous l'eau du robinet. Mixer tous les ingrédients ensemble jusqu'à obtention d'une purée sans grumeaux. Certains le préfèrent moins fin. C'est à vous de choisir! Variations : vous pouvez varier le goût de cet hummus maison : en ajoutant 2 cuillères à café de cumin ou en ajoutant 2 cuillères à café de paprika ou en ajoutant quelques champignons de Paris ou en ne mettant pas de tahiné
